Egg fried rice

The key to good friend rice is preparation. My tip is to cook the rice beforehand and then let it go cold. I usually cook it in the morning before I leave for work, pop it in the fridge and then its ready for when I get home. This rice goes great with any meat or fish. Especially my lemon and garlic chicken kebabs.

Ingredients

  • Brown rice
  • 2 cloves of garlic, finely chopped
  • Thumb sized piece of ginger
  • 1 Pepper chopped into small pieces
  • 1 red onion, finely chopped
  • 1 egg, whisked
  • Soy sauce

Method

This first step is to cook the rice beforehand and let it go cold. You need a wok on high, and add a splash of oil. Add the garlic, ginger, peppers and onions to the pan and fry those, once these are softened make a well in the center of the wok and add your whisked egg. Stir until this is cooked and then add your rice. As the rice is already cooked you just want to heat it through, I add a couple of splashes of soy sauce and some pepper and then you are done! So quick and easy. If there is any left over I usually take it work the next day for my lunch.IMG_2298
