So I’ve finally stopped playing the new Taylor Swift song on repeat long enough to write a new post!!!
I’ve recently rediscovered my love for king prawns, and I can’t get enough. I usually only get raw prawns but Tesco didn’t have any at the weekend, so I had to get cooked, but actually worked really well, and made the dinner a lot quicker to make.
Serves: 2
Prep time: 5 mins
Cooking time: 5 minutes
Ingredients
- 1inch piece of ginger, finely chopped
- 2 garlic cloves, finely chopped
- Stir fry veggies (I like mangetout, corn and tender stem broccoli)
- 1 chilli, finely chopped
- 150g cooked king prawns
- 1tbsp soy sauce
- 2tbsp oyster sauce
- 1 lime
- 2 medium egg noodle nests
- 1tsp sesame oil
Method
- In a large saucepan cook the noodles in boiling water for 5 minutes,
- Add the sesame oil to wok on a high heat, then add the ginger, garlic, veggies and chilli, and fry for 2 minutes
- Add the prawns to the wok along with the soy sauce and oyster sauce
- Drain the noodles and add the to the wok along with the juice of 1 lime
- Serve into bowls and try and use chopsticks
