King Prawn Stir Fry

So I’ve finally stopped playing the new Taylor Swift song on repeat long enough to write a new post!!!

I’ve recently rediscovered my love for king prawns, and I can’t get enough. I usually only get raw prawns but Tesco didn’t have any at the weekend, so I had to get cooked, but actually worked really well, and made the dinner a lot quicker to make.

Serves: 2

Prep time: 5 mins

Cooking time: 5 minutes

Ingredients

  • 1inch piece of ginger, finely chopped
  • 2 garlic cloves, finely chopped
  • Stir fry veggies (I like mangetout, corn and tender stem broccoli)
  • 1 chilli, finely chopped
  • 150g cooked king prawns
  • 1tbsp soy sauce
  • 2tbsp oyster sauce
  • 1 lime
  • 2 medium egg noodle nests
  • 1tsp sesame oil

Method

  1. In a large saucepan  cook the noodles in boiling water for 5 minutes,
  2. Add the sesame oil to wok on a high heat, then add the ginger, garlic, veggies and chilli, and fry for 2 minutes
  3. Add the prawns to the wok along with the soy sauce and oyster sauce
  4. Drain the noodles and add the to the wok along with the juice of 1 lime
  5. Serve into bowls and try and use chopsticks
