Lemon and garlic chicken kebabs

This is another super quick after work dinner. I marinate the chicken and night before so all the flavors really soak in. This goes great with my egg friend rice, or you could put it into a pitta bread with some new potatoes and salad. Its so versatile. Feel free to use as much garlic as you want. I love lots of garlic so I use 4 cloves, but its all down to personal taste.

Ingredients

  • Chicken breast cut into bite sized pieces
  • 4 cloves of garlic, chopped
  • Juice of 1 lemon
  • Olive oil
  • Pinch of salt and pepper

Method

I use a zip lock bag to marinate this. I put all the ingredients in and massage the chicken so every piece is covered, I then chill overnight. I cook this under the grill, but you could just as easily fry it, for about 10 minutes depending on the size of your chicken. Just don’t tip the olive oil into the grill, as it will smoke and make your eyes water!!!

As an added extra I cut a pepper and red onion into chunks and pop this under the grill as well, as it goes all black and charred. Its so delicious.
