This is one of my favorite quick, after work dinners. You could make this even speeder by using noodles instead of rice.
Ingredients
- Salmon fillets cut into large chunks
- Teriyaki (enough to coat the salmon)
- Brown rice
- Garlic
- Ginger
- Sliced chili
- Coriander
Method
The first step is to marinate the salmon in the teriyaki for about 30 minutes. I wouldn’t advise doing it for any longer.
I use brown rice as opposed to white rice, but any rice or noodles or even some stir fry vegetables would be really nice. Brown rice takes around 20-25 minutes to cook.
While the rice is cooking I chop my ginger and garlic finely and set aside.
When the rice has about 8 minutes left I heat a wok up, with a splash of oil. Then when its hot add my salmon for 3 minutes and then add the ginger and garlic, as you don’t want these to burn. Then let them cook for another 3 minutes or until cooked throughout.
Drain the rice once cooked and serve with the salmon on top, I then add some coriander and sliced red chili on top, but this is optional. This makes it looks pretty!
