Baked Camembert

So it’s that dreaded time of year.. flu and cold season, and I’ve caught a stinker of a cold! I’m really not feeling doing anything today, except sitting in front of the TV watching re-runs of friends and drinking soup on tap!

Unfortunately I have a husband which requires food, and I promised him i’d make him a pie (which i’m very much regretting now) today. So i’ll post that recipe later. But for now, hopefully this recipe for a delicious and warming baked Camembert will suffice.

This is perfect for a romantic night in for 2, or for a starter for a dinner party. Try to buy the best camembert you can, preferably one that’s pungent!

Ingredients

  • Camembert
  • 1 garlic clove, cut into small slithers
  • 1 tsp chopped rosemary
  • 1 tsp olive oil
  • Salt and pepper

Method

Pre-heat your oven to 180ºc fan.

Remove all packaging from the camembert and place in a cheese baker, or tin foil. Make diagonal slits over the top, and place slithers of garlic inside these. Make sure the slithers are as thin as possible, you dot want huge chunks of garlic.

Sprinkle the rosemary on top, along with some salt and black pepper, and rub in the olive oil.

Bake in the oven for 15-20 minutes or until the camembert has melted. Serve with crusty bread.
