Greek Chicken Gyros

Happy Sunday everyone,

I feel in love with chicken gyros about 7 years ago, when my Husband was a manager at a Greek restaurant. I would go most lunchtimes and take advantage of the free food. When done properly they are moist and flavourful, a perfect quick after work dinner.

Ingredients

  • Chicken breasts
  • 2 garlic cloves
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • 4 tbsp Greek yogurt
  • 1 tbsp oilve oil
  • 1 red pepper, cut into chunks
  • 1 red onion, quartered

Method

To marinate the chicken I use a plastic zip lock bag. I cut the chicken into bite sized pieces and place in the bag, along with the garlic cloves finely chopped, lemon juice, dried oregano, greek yogurt and olive oil along with a pinch of salt and pepper. I leave to marinate over night if possible.

Cook the chicken under a high grill for 5-7 minutes each side, along with the pepper and onion.

I serve this with some pitta breads.

    This is easy and simple. I just put my chicken with the marinate in the fridge. LOL!
