Thai Spicy Basil Chicken

I’ve just realised I haven’t done a blog post in a few days… I’m sorry guys I’ve been caught up in watching the Olympics! Who knew Archery could be so exhilarating!!!

I’ve been suffering with a cold all week, so I decided to make a dish with lots of chilli to sweat the flu out. You can make this as hot as you like, maybe try using scotch bonnets or bird eye chillies for an extra kick.

I served this with lettuce leaves, to act like a wrap.

Ingredients

  • Chicken or turkey mince
  • 2 Chillies
  • 4 shallots
  • 4 cloves of garlic
  • 1 pinch of sugar
  • 2 tbsp soy sauce
  • 1tbsp fish sauce
  • 1/3 cup chicken stock
  • 1 bunch basil
  • 1 lime

Method

Thinly slice the chillies, shallots and garlic and add to a wok on a high heat with some oil. I used sesame oil. Let them fry for a couple of minutes. Then add your mince and allow to brown. Then add your sugar, soy sauce, fish sauce, and stock and reduce.

Finally, add the basil leaves and service with lime wedges.

It’s as simple as that guys!!!
