We decided to have a fake bbq tonight for dinner. Its fake because we didn’t use the bbq, we just ate food which you would usually put on a grill! I just don’t see the point in lighting a bbq just for the two of us.
I first made these skewers last year after becoming obsessed with halloumi. This is such a fresh, summery side dish, its the perfect vegetarian accompaniment.
Ingredients
- 250g Halloumi
- 1 Courgette
- 1 Chilli
- Mint Leaves
- Lemon
- Olive oil
Method
Chop your halloumi and courgette into bite sized pieces and place in a bowl, along with 1 chilli, de-seeded and thinly sliced. Thinly chop your mint leaves and add to the bowl, along with the juice of 1 lemon and a drizzle of olive oil. Stir, and leave to marinate in your fridge for at least half an hour.
If cooking on a bbq, skewer the halloumi and courgette and cook until charred. I put these under the grill for about 8 minutes, on a high heat and turned half way through.
