Chocolate Chip Cookies

These cookies are amazing, they are crispy round the edges and soft and chewy in the middle, for me they are the perfect combination. You need to be careful as these can go from being raw to burnt in 30 seconds in the oven, I just watch the oven like a hawk until they are done.

Ingredients

  • 100g Softened Butter
  • 75g Caster Sugar
  • 50g Light Muscovado Sugar
  • 1/2 tsp Vanilla Extract
  • 1 Beaten Egg
  • 150g Self Raising Flour
  • 100g Chocolate Chips

 

Method

Pre-heat the oven to 170ºC (fan) and lightly grease your baking trays.

Measure the butter and sugar and beat thoroughly until blended. Add the vanilla to the beaten egg, and slowly mix this into the butter and sugar, making sure it is well combined before adding more.

Mix in the flour and finally stir through the chocolate chips.

Spoon large teaspoons of the mixture onto your baking trays, leaving room for the cookies to spread.

Bake them in the oven for 8-10 minutes. Once done leave them to cool in the trays for a few minutes and then transfer carefully to a wire cooling rack.
