I wrote a blog yesterday about my pulled pork and BBQ sauce so today I thought I’d add a leftover recipe. I always find there is loads left over, so I decided to make a grilled cheese for lunch…
- Leftover pulled pork
- BBQ sauce
- Grated vintage cheddar
- 2 slices of bread (I like seeded, wholemeal bread)
Mix your leftover pork and BBQ sauce together in a saucepan and put on a low heat until its warmed through.
Butter your bread and place these butter side down on a large flat pan on a medium heat. Add the cheese to one side and the pulled pork to the other. Once both sides are brown and toasted place one side of bread on top of the other and press down with the a spatula. Leave the cheese to melt for a minute and then remove from the pan, cut in half and serve with a side salad, perfect lunch!
