Pulled pork is such a good lazy weekend dinner. Its great to put in a slow cooker, potter around the house or go out for the day, come back and your house smells amazing. Its all in the preparation. I like to serve this with some home made potato wedges and coleslaw.
Ingredients
Pulled Pork
- Shoulder of pork
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1/2 tsp smoked paprika
- 1/2 tsp mustard powder
- 1/2 tsp ground cumin
- 1 tsp salt
- 1 tsp ground black pepper
- 1 White onion, sliced
- 1 garlic clove finely chopped
- 1 cup chicken stock
BBQ Sauce
- Cooking liquid and onions from pork
- 4 tbsp tomato ketchup
- 1 tbsp tomato puree
- 1 tbsp apple cider vinegar
- 1 tsp Worcestershire sauce
- 1 tbsp Siracha
Method
Mix the cayenne pepper, paprika, smoked paprika, mustard powder, cumin, salt and pepper and rub over the pork. Wrap in cling film and leave in the fridge to marinate overnight.
The following morning, chop a white onion and garlic and place at the bottom of a your slow cooker, add the pork, so it sits on top, and then pour over the chicken stock. Leave to cook on a low heat for 6-8 hours, or until the meat is falling apart.
Once cooked, remove the meat from the slow cooker and cover in tin foil to keep warm. Transfer the liquid, onions and garlic to a blender and blend until smooth. Empty into a saucepan and set on a low heat. Add the ketchup, tomato puree, apple cider vinegar, Worcestershire sauce and Siracha and stir well. let this simmer for 10-15 minutes, if you like a thicker consistency, in a cup mix 1 tbsp of flour with some water and mix until smooth, add this to the sauce and allow to simmer for another 5 minutes.
When ready, using 2 forks shred the meat and cover in the BBQ sauce.
