We are so close to the weekend I can smell it, I’m planning on doing some recipe research this weekend, so over the next couple of weeks I should have some brand spanking new stuff!!!
This is my go to easy dessert, my Mum (shout out to Jan) has been making this for years, it always reminds me of Sunday dinners, sat round the table with my whole family. Such good times!
Ingredients
- 150g Butter
- 150g Caster Sugar
- 150g Ground Almonds
- 150g Self Raising Flour
- 1 Egg
- 1 tsp Ground Cinnamon
- 225g Raspberries
Method
Line and grease 8inch tin, pre-heat the oven to 180ºc.
Place the butter, sugar, almonds, flour, cinnamon and egg into a bowl and beat well until combined.
Spread half of the mixture at the bottom of the tin, and flatten lightly with a fork to cover the surface. Spinkle over the raspberries, and then dot with the remaining mixture.
Bake in the middle of the oven for 40-45 minutes, or until the top is firm and springs back.
