Bruschetta, to me is perfect dinner party food. You make them into small canapés, or a starter, or part of a tapas style menu. They are so versatile, you could put practically anything as the topping. As long as you choose good quality bread and olive oil you can’t really go wrong.
Below is the classic topping, but I’d love to hear some alternatives in the comments.
Ingredients
- Ciabatta, sliced
- Olive oil
- 1 garlic clove
- Basil
- Mozzarella
- Tomatoes (keep at room temp)
Method
I prefer to use a griddle pan to toast the breast, but you could use the grill. Just make sure it doesn’t burn.
Once the bread is toasted, brush with olive oil, and rub the garlic clove over it.
Place the mozzarella, basil and tomatoes on top, and sprinkle with salt and pepper.
