Chicken and Chorizo Traybake

I hope all you lovely Mothers are being throughly spoilt today!!!

I have a slight obsession at the moment with tray bakes! They are so easy, and also so versatile, you will never get bored of them because you can do them with so many different ingredients.

As the title suggests this is a chicken and chorizo one, it’s the perfect after work dinner. I love it because the spices cover the veggies and make it taste amazing.

Serves: 2

Prep time: 10-15 minutes

Cooking time: 30-40 minutes

Ingredients

  • 4 skin on, bone in, chicken thighs
  • 2 tsp cayenne chilli pepper
  • 1 tsp sweet smoked paprika
  • Pinch of salt and pepper
  • Drizzle of Olive oil
  • 1 Pepper
  • 1 red onion
  • Mini chorizo sausages
  • Handful of baby potatoes
  • 2 garlic cloves, finely chopped
  • Olive oil

Method

Pre-heat your oven to 190°c Fan.

Make a paste with the cayenne, paprika, salt, pepper and a drizzle of olive oil, then rub this over the chicken thighs, and place on a large roasting tray.

Chop the pepper, onion and potatoes into chunks and add to the tray.

I cut the mini chorizo sausages in half, and then add them to the tray along with the garlic cloves, and drizzle with a little olive oil or I sometimes use Fry Light 1 calorie cooking spray.

Make sure everything is coated with oil, and pop in the pre-heated oven for 30-40 minutes.
