A couple of weeks ago, we both got back late from work, our original plan for dinner would have taken about an hour, so that was out of the window. We wanted something super quick, so after a look round the kitchen, I noticed eggs, mini chorizo sausages and spinach. Omelette/frittata it was.
If you’re in need of a quick after work dinner that you can throw together in a couple of minutes, then look no further. You can pimp this up by adding some chopped onion or chilli. Hope you all enjoy as much as we did.
Ingredients
- 6 eggs
- mini chorizo sausages cut in half length ways
- Handful of spinach
- 50g feta, crumbled
Method
Turn your grill to high.
In a oven-proof frying pan, add a splash of oil and throw in your chorizo, fry until browned, and add the spinach so it begins to wilt.
Add your eggs, and cook until the top is just about set. Sprinkle over the feta and pop under the grill for 2-3 minutes.
Serve with a side salad.
