Lemon Drizzle Loaf Cake

Happy Sunday everyone,

There are days when you don’t fancy baking anything fancy, and I was in one of those moods yesterday, so I decided to dust off a personal favourite of mine, a lemon drizzle loaf cake. It’s so easy, even my husband could make it! If you are new to baking, then this is a good recipe to try.

Ingredients

  • 170g Unsalted Butter, room temp
  • 170g Caster Sugar
  • 3 Eggs, beaten
  • 170g Self-raising Flour, sieved
  • Zest of 2 lemons
  • If using a mixer 1tsp of baking powder

Drizzle

  • 110g Icing Sugar
  • Juice of 2 lemons

Method

Pre-heat your oven to 180ºc, and grease a loaf tin.

Beat the butter and sugar until light and fluffy, then slowly add your eggs, a bit at a time until all incorporated. With a metal spoon fold in the flour, and baking powder if using a mixer, and the lemon zest.

Pour into the loaf tin and bake in the pre-heated oven for 30-35 minutes.

While the cake is in the oven, mix the icing sugar with the lemon juice until it forms a smooth paste.

Once the cake is cooked, remove the oven and poke holes all over, making sure you go to the bottom. Then pour over the drizzle, and leave to cool in the tin.

Dust with icing sugar if you’re feeling fancy xxx
