Chicken Satay

Hi everyone,

I LOVE CHICKEN SATAY!!!

Phew, i’m so glad I got that out there! I’ve been holding this recipe back for a few weeks, but this is one of my favourite recipes to cook and eat.

This is based on a Jamie Oliver recipe from his 30 minute meals book, but I have tweaked this slightly. This can be served with rice or noodles.

Ingredients

  • Chicken breast cut into bite sized pieces
  • 4 heaped tablespoons of peanut butter (smooth of crunchy)
  • Juice of 1 lime
  • 2 cloves of garlic
  • Bunch coriander
  • 1 tbsp soy sauce
  • 2 dried chillies
  • Pinch of pepper

Method

To make the satay sauce, add the peanut butter, lime juice, garlic, coriander, soy sauce, chillies and pepper in a food mixer, and pulse into relatively smooth.

Cover the chicken in the sauce, and leave in the fridge for at least 20 minutes.

Cook under a medium grill for 10 minutes or until cooked through.
