This is one of my favorite after work dinners. It’s so quick, simple and delicious. It’s also so versatile, you could add chili if you want to, or less garlic, or add some vegetables to bulk it up.
- Wholewheat penne pasta
- Spicy Chorizo, chopped into 1cm half round,
- 3 cloves of garlic, finely chopped
- Sprig of rosemary, finely chopped
Cook your pasta according to the packet instructions in salted boiling water. When it has 6 minutes to go put a pan onto a low heat and add a splash of olive oil, then add your chorizo, garlic and rosemary and cook on a low heat for 5 minutes. Then remove from the heat.
Drain the pasta and add to the chorizo mixture, stir thoroughly then grate over some paremesan!
