I found this recipe whilst searching on Pinterest, I cant remember who originally posted it, but I have made some slight adjustments. These brownies are the perfect mix of sweet and salty. I’m not a massive sweet fan so I have toned down the sugar, as I find the caramel gives it more than enough sweetness.
Ingredients
- 1½ cups plain flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 ½ cups golden caster sugar
- ¾ cup cocoa powder
- 1 cup oil
- ¼ cup semi-skimmed milk
- 4 eggs
- Chocolate chips
- 1 ½ cans caramel (I use Carnation)
- 1 tsp course sea salt
Method
Pre-heat your oven to 170ºc. Line a 9×13 inch tin with parchment paper and spray with oil. This helps stop the caramel from sticking.
In a large bowl, combine the flour, baking powder and salt.
In another large bowl beat together the sugar, cocoa powder, oil and eggs and milk. Add the dry ingredients and fold until combined, and add the chocolate chips.
Pour half of the batter into the pre-prepared tin and put it in the oven for 7 minutes. Meanwhile empty the caramel into a bowl and warm slightly in a microwave with the salt.
After the 7 minutes are up, poke holes in the brownie layer and pour over the caramel, then pour over the remaining brownie mix. I then a swirl a knife over it lightly to slightly mix the caramel and brownie.
Cook in the over for 25 minutes or until its cooked.
