Baked Halloumi

1 week until Christmas!!! Which means it’s 1 week until I cook for 14 people!!!!! If anyone has any tips on catering for a large crowd please comment below.

Today’s post is about the squeaky chesse halloumi. I love halloumi, its so versatile. I got the inspo for this when we went out for dinner with my big bro and his gf Kirsty, she ordered a halloumi burger and it looked delicious, so I decided it would make a good blog post.

Now, i’ll warn you first that I don’t actually have a picture of the burger, mainly because it looked so good, we demolished them straight away! Even my husband who demands meat in every meal loved these, and I quote said ‘wow, you don’t even miss the meat’. I was gob smacked, I’ve never heard him say this before, so you know they are good!

Ingredients

  • 250g Halloumi
  • Panko breadcrumbs
  • 2 dried chillies
  • salt and pepper
  • 2 eggs, beaten

Method

Pre-heat your oven to 180ºc fan, and spray a baking tray with olive oil spray.

In a bowl combine your panko breadcrumbs, dried chillies and some salt and pepper.

Cut your halloumi into 4 even slices, cover with the beaten egg and then into the breadcrumbs. Then back into the egg and finally in the breadcrumbs. Place on the baking tray, and repeat with the other 3 slices.

Spray the halloumi with oil again, and place in the oven for 10-15 minutes, or until the top is crisp.

    Tip when you cook for big groups-Prepare the sauces and side dishes a day in advance. Last minute you only have to reheat or bake and then you are sorted! Also dessert. Set it the previous night. Don’t use the oven for all the dishes otherwise you’re in a soup unless you have two or three!
