Chicken Tikka Masala

I love a curry… who doesn’t love curry??? If you don’t like a curry than you don’t have a soul frankly. I’m not talking blow your brains out hotness, but a rich, flavourful curry, it doesn’t get much better than that.

I hate it when people just buy a sauce to add to the chicken, they taste like crap. It’s so easy to make your own paste or sauce, and you don’t even need that many ingredients.

This curry, isn’t particularly a quick after work dinner, it does take some time because there are a few components to it. I’ll break it down for you…

Ingredients

For the Tikka

  • 675g chicken breasts,
  • 1tsp salt
  • 3tbsp lemon juice
  • 1tbsp grated root ginger
  • 3 garlic cloves crushed
  • 2tsp ground cumin
  • 2tsp paprika
  • 3tsp chilli powder
  • 2tsp garam masala
  • 6tbsp cream
  • 3tbsp olive oil

For the masala sauce

  • 2tbsp olive oil
  • 1 onion, finely sliced
  • 1tbsp ginger, grated
  • 5 garlic cloves, crushed
  • 1tbsp ground coriander
  • 1tsp tumeric
  • 1 chilli powder
  • 2tsp paprika
  • 4tbsp yogurt
  • tin of chopped tomatoes
  • 150ml chicken stock
  • 1/2tsp garam masala

Method

Begin by marinating the chicken. Lightly score the chicken breasts and place in a large bowl with all of the tikka ingredients listed above. Coat the chicken thoroughly, cover with cling film and leave in the fridge to marinate overnight.

When you’re ready to begin cooking, pre-heat your oven to 180ºc (fan assisted), and line a baking tray with tin foil. Evenly spread your chicken onto the tray, and place in the oven for 30 minutes.

For the sauce, pour the oil int a large lidded pan, and place on a medium heat. When the oil is hot add the onions,ginger and garlic and allow to cook for 5 minutes. Then add your spices, and stir until its all combined. Allow the spices to cook for 3 minutes, then add the yogurt a tablespoon at a time, until its all combined.

Finally, add the chopped tomatoes and stock and cook for 20 minutes, or until the sauce has thickened.

Once the chicken is cooked, cut into bite sized pieces and mix into the sauce. Serve over rice, and enjoy.
