Happy Thursday everyone,
So, this is my go to, last minute, dinner party dish. It’s so quick and easy to make.
Ingredients
- 1 White onion
- 3 cloves of garlic
- Pack of sausages,
- 2 tsp fennel seeds
- Beef stock cube
- 1 tbsp tomato puree
- Splash of red wine
- Tin of chopped tomatoes
Method
Start by finely chopping the onion and garlic, and then slowly cooking this in a medium sized pan, with a splash of olive oil.
Whilst the onion and garlic are sweating, remove the meat from the sausage casings, and remove any large pieces of fat.
Once the onions are browned add the sausage meat to the pan, and ‘squish’ them with the back of a spoon, so they get brown. Once the meat is browned on all sides, add the fennel seeds, crumble the stock cube in and add the tomato puree.
After 3 minutes, add the red wine and chopped tomatoes, and allow to cook for at least 15 minutes. I think it tastes better if you cook it on a low heat for longer.
This can be served with any type of pasta, I prefer wholewheat penne 🙂
