Live Blogging Chicken Pie

Happy Sunday everyone,

My first blog today was introducing you all to my blog for the day. I’m going to be live blogging making my chicken pie. This recipe is perfect for a damp dreary day, such as today! I posted the ingredients you will need in my post earlier. So please carry on reading if you want to join in xxx

I need to start by prepping my ingredients. I first finely chop my onion…

I love to listen to music whilst in the kichen… on my playlist today is Calvin Harris – Summer

I next need to chop my chicken, I start by removing all the fat, and cutting into bite sized pieces…

Next step is to cut the streaky bacon, into small pieces…

Once you’ve cut the streaky bacon, add to a flat bottomed pan, with a tablespoon of oil and fry on a medium heat until crispy…

My bacon is cooked, so i’ve transferred it to a plate lined with kitchen roll to soak up any excess oil

Add the chopped onion to the same pan, and cook on a low heat…

Next step, is to add the chicken thighs to the pan, and allow to brown on all sides…

Remember to add a pinch of black pepper, you don’t need any salt and the bacon is very salty…

My chicken is browned on all sides, so I add my 2 tbsp of plain flour and stir, so it soaks up all the oils and juices. I then add my chicken stock and milk, and stir thoroughly

Leave to simmer on a medium heat for 30 minutes, or until the sauce has thickened.

Oh s**t i forgot to mention the peas!!!!

Not to worry, these go in at the end…

Remember to stir the mixture every so often, otherwise it will stick…

My mixture is nearly there, I now need to add my streaky bacon back to the pan, and my petit pois…

Turn off the heat and transfer to your pie dish, and leave to cool…

Welcome back everyone, the first step is switch your oven on to 200ºc…

I use ready rolled puff pastry, its so much easier, than making your own, this is one of few ready made ingredients which I actually buy. Making your own is such a fuss!

Crack your egg in a bowl and give it a good whisk.

Place your puff pastry over your pie mixture, and trim off any excess…

make 3 slits in the pastry, to allow for steam to escape. Using a pastry brush. Brush the egg over the puff pastry.

Once the oven has been pre-heated, place the pie in the oven for 30 minutes, or until the top is crispy.
